Freshly kneaded whole wheat dough is slapped directly onto the scorching inner walls of a blazing hot tandoor — baking rapidly in the intense dry heat until perfectly puffed, lightly charred, and wonderfully smoky on the outside while staying soft, warm, and fluffy within.
